Ingredients.

  1. 10 corn tortillas
  2. 2 chicken breasts boiled and shredded
  3. 10 slices of Capistrano excellence ham.
  4. ¼ coriander, chopped.
  5. 2 cups of mole poblano.
  6. ½ onion cut into julienne.
  7. 1 cup of Manchego cheese and grated.
  8. 1 cup cream
  9. ½ chicken broth.

Preparation.

  1. Preheat the oven to 250 degrees Celsius.
  2. In a medium saucepan, dilute the mole with ½ cup of chicken broth and cook over low heat until it boils.
  3. Fill each tortilla with shredded chicken.
  4. Then roll it up.
  5. Place it in a large baking dish previously greased with oil.
  6. Bathe the tortillas with the mole sauce and sprinkle them with Manchego cheese.
  7. Bake the enchiladas for 15 minutes or until you see that the cheese is melted.
  8. Remove from the oven and serve with the onion, Capistrano Excellence ham and fresh cream.
  9. Enjoy.
