Ingredients.
- 200g Slices of Capistrano excellence ham
- 300g Basmati rice
- 160g Cherry Tomatoes
- 70g Radishes
- 1 Mango
- 2 Avocado
- 2 Carrots
- 200g Edamame
- 50ml Rice vinegar
- 100ml Soy sauce
- 1 Lemon
- 1 Orange
- 1 Lima
- Black sesame
- Salt
- Black pepper
Preparation.
1. Cut the slices of Capistrano excellence ham lengthwise and set aside.
2. Peel and cut the mango into medium dice or chunks and set aside.
3. Peel the carrot and cut it into slices. Set them aside equally
4. Wash and slice the radishes. Reserve.
5. Wash and cut the cherry tomatoes into quarters. Reserve.
6. Peel and slice the avocados. Reserve in the fridge with a splash of lemon so it does not oxidize.
7. Grate the skin and squeeze the citrus juice. Book separately.
8. Boil the edamames with water and salt for 5 minutes. Drain, peel and reserve.
9. Boil the rice with water and salt for 10 minutes. Drain, cool and reserve in a bowl, mix the rice vinegar with the soy sauce, the citrus juices and the zest (to taste).
10. Mix until you get a homogeneous vinaigrette. Reserve.
11. To serve, place the basmati rice at the base of the bowl and garnish with tomato, carrot, edamame, radishes, mango and avocado. Place the strips of bait Iberian ham in the center and sprinkle black sesame on top.
