The main streets of each part of the country are filled with national colors, flags, the bells resound and there are parties everywhere. But we not only celebrate this national event in Mexico because each Mexican celebrates in the place where he resides. This day unites them to their hometown, its people and traditions.
Much of the wealth that Mexico has in this month lies in the delicious typical dishes that are served at the table. Those colors, textures and the combination of smells that become essential when tasting a typical dish.
That is why today we will teach you how to create one of the favorite dishes of Mexican cuisine so that you can be a part of this month wherever you are.
Prepare with us some delicious mole enchiladas garnished with Capistrano excellence ham, stuffed with shredded chicken for these national days.
Ingredients.
- 10 corn tortillas
- 2 chicken breasts boiled and shredded
- 10 slices of Capistrano excellence ham.
- ¼ coriander, chopped.
- 2 cups of mole poblano.
- ½ onion cut into julienne.
- 1 cup of Manchego cheese and grated.
- 1 cup cream
- ½ chicken broth.
Preparation.
- Preheat the oven to 250 degrees Celsius.
- In a medium saucepan, dilute the mole with ½ cup of chicken broth and cook over low heat until it boils.
- Fill each tortilla with shredded chicken.
- Then roll it up.
- Place it in a large baking dish previously greased with oil.
- Bathe the tortillas with the mole sauce and sprinkle them with Manchego cheese.
- Bake the enchiladas for 15 minutes or until you see that the cheese is melted.
- Remove from the oven and serve with the onion, Capistrano Excellence ham and fresh cream.
