Ingredients.

  • 1/2 Kg. Fresh spinach
  • 1 clove garlic
  • 1 liter Vegetable broth, you can use chicken broth
  • 5 tablespoons of extra virgin olive oil
  • 1 slice of bread
  • 7 slices of Capistrano excellence ham
  • Salt to taste
  • 5 grains ground black pepper
  • 1 small white onion

Preparation.

1. Chop the onion and garlic into small pieces.
2. In a saucepan, add the oil and simmer the onion and garlic for a few minutes, taking care that they do not burn because they can become bitter and change the flavor.
3. Pour in the broth and bring to a boil, incorporating the spinach, letting it cook for about five minutes.
4. Once the spinach is cooked, pass them through the blender until the texture is as fine as possible. Rectify the salt (carefully taking into account that the stew broth already incorporates the salt) and add the black pepper.
5. Keep the cream warm while, cut the bread into small pieces.
In a saucepan or frying pan, add olive oil and fry the pieces of bread, remove and leave them on kitchen paper that drain well.
6. In the same oil, fry a few spinach leaves that are crisp, drain well, leaving them also on kitchen paper.
7. Fry some ham and garnish the dish topping it with the best Capistrano ham.
